Hi, Yenney:

To remove the instrument name display, go to the Format menu and uncheck Show Instrument Names.

Under the Show Instrument Names/Options item, there are several choices as to what, if any, instrument names or short names can be displayed.

To change the title, go to the File menu and choose Song Title and Authors. Any changes you make there are reflected in the Page Text Title display.
